ingredients
350 g penne
2 tablespoons pesto
3 tablespoons olive oil
1 orange bell pepper deseeded and diced
1 yellow bell pepper deseeded and diced
1 red onion finely diced
80 g pitted black olives
125 g cherry tomatoes, halved
175 g salami in small pieces
125 g mozzarella, cut into bite-sized pieces
salt and pepper
Fresh basil for garnish
Preparation
In a large pot, bring lightly salted water to a boil. Add the pasta and bring the water back to the boil. Cook for 10-12 minutes, drain and place in a bowl.
Stir the pesto and olive oil into the hot pasta, then allow to cool, stirring occasionally.
Add the peppers, onions, olives, tomatoes, salami and mozzarella to the pasta and mix well. Season with salt and pepper and serve garnished with basil
