The preparation of this wonderful and delicious melon salad is just as effortless and practical. It is an excellent and healthy recipe to be prepared quickly and eaten with pleasure.
for 4 people
- 350 grams of watermelon
- 1/2 small honeydew melon
- 1/2 cantaloupe melon
- 1/2 cucumber, peeled and diced
- 50 g fresh pea sprouts
- fresh mint leaves for garnish
Dressing
- 3 tablespoons light olive oil
- 1 tablespoon of white wine vinegar
- 1/2 teaspoon of sugar
- 1 tablespoon of freshly chopped mint
- salt and pepper
Preperation
- Cut the melon flesh into pieces of the same size and remove all the seeds. Put the melon pieces and cucumber in a bowl.
- For the dressing, whisk together all the ingredients in a small bowl.
- Drizzle the dressing over the Melon salad and mix well. Cover and place in the fridge for at least half an hour.
- Add the pea sprouts to the chilled melon salad and gently fold in. Pour into a salad bowl, garnish with mint leaves and serve.
