Ingredients
- 300g young spinach leaves, washed and drained
- 2 tablespoons olive oil
- 150 grams of pancetta
- 300 g mixed mushrooms e.g. Mushrooms and oyster mushrooms, sliced
Dressing
- 5 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon mustard
- 1 pinch of sugar
- salt and pepper
Preparation
- For the dressing, mix all the ingredients in a bowl. Place the spinach in a large salad bowl.
- Heat the oil in a pan and fry the pancetta for 3 minutes. Add the mushrooms and stew for 4-5 minutes.
- Pour in the dressing and pour the entire contents of the pan over the spinach. Mix well and serve immediately.
